When buying grilling steaks these are the main things you need to remember:
1. For grilling, it’s best to buy fresh from the butcher’s shop.
2. The two best cuts of steak for grilling are Ribeye steak and strip steaks (often referred to as New York strip or Kansas City strip). Ribeye steak is tastier, but is also more expensive.
3. Along with the cut of the steak, the grade of the steak also makes a difference in taste and grilling. The USDA offers three grades of meat: Prime (best), Choice (middle) and Select (lowest). It’s best to choose prime cuts whenever possible.
4. Steak cuts should be between 1 and 1.5 inches thick without any bones.
