Look for leaves about 4 inches long, at their peak of freshness.
Organic Issues:
Arugula is commonly grown organically, as it does not attract many insects. Flea beetles are more common in the eastern states, and tiny holes in the leaves may confirm that the product was unsprayed (organic).
