When to Buy/In Season:
September to June
How to Select:
Look for small, compact endives with white leaves edges with pale green. Avoid any with wilted outer leaves. (for curly endive, see guidance for lettuce and salad greens).
Organic Issues:
Conventionally grown Belgian endive is rarely treated with pesticide and is generally considered free of chemicals; other endives are treated fairly heavily.

Fresh:
Use the same day you buy it if possible. Refrigerate in crisper or wrapped in plastic bags to keep fresh; use within 1 – 2 days.
